THE POWER OF MUSHROOMS The multifunctionality of mushrooms is their superpower. While there are thousands of species of mushrooms that exist, only 25 are widely accepted as food; within that 25 are a variety of flavors, textures, and health benefits. Mushrooms also have a rich cultural history and have been valued as a nutrient source for centuries. Ancient Greek warriors ate mushrooms to sustain themselves through battle, Romans considered them the "food of the Gods," and ancient Chinese culture referred to them as an "elixir of life." 2 In modern society, mushrooms are considered part of a healthy diet. They're cholesterol-free and low in calories, carbohydrates, fat, and sodium while boasting nutrients like selenium, potassium, riboflavin, niacin, vitamin D, proteins, and fiber. Mushrooms are also said to have healing properties, both as a dietary supplement and to combat disease.
