FEED YOUR FACE
Try this gluten-free creamy soup
packed with vitamin C-rich carrots
and collagen-rich chicken broth.
1 tablespoon olive oil
2 1⁄2 cups chopped carrots
1⁄2 cup chopped white onion
1 garlic clove, minced
1 teaspoon grated ginger
1 tablespoon orange juice
1 1⁄2 cups chicken broth
1⁄4 teaspoon salt
1⁄4 teaspoon freshly ground pepper
Heat the olive oil in a medium saucepan over
medium heat. Add the carrots and onion
and cook until softened, about 8–10 minutes,
stirring often. Stir in the garlic and remove
from heat.
Add the slightly cooled carrot mixture,
ginger, orange juice, chicken broth, salt, and
freshly ground pepper to a blender. Blend for
45 seconds until creamy and smooth.
Serve! Garnish with an extra drizzle of high-
quality olive oil, freshly ground pepper, and
chopped cilantro or parsley.
