With the holiday season in full
swing, enjoy this updated take
on the classic crudité platter—
roasted broccoli florets with
a spicy curry dipping sauce.
Packed with vitamin C, it's a
crowd-pleasing appetizer that's
helpful to your skin and waistline.
Ingredients
1 bunch broccoli, cut into florets
2 teaspoons oil
2 teaspoons curry powder, divided
¼ teaspoon cayenne pepper,
divided
½ teaspoon cumin
⅓ cup light mayo
1 lime, zest and juice
1 garlic clove, finely minced
Instructions
Preheat the oven to 400 degrees F. Toss
broccoli florets with oil, 1 teaspoon curry
powder, 1/8 teaspoon cayenne pepper,
cumin, and a pinch of salt and pepper.
Using your hands, rub all of the spices on
the broccoli so each floret is coated.
Place broccoli on a baking sheet and
roast for 18–20 minutes, flipping halfway
through.
Mix together mayo, lime zest and juice,
garlic clove, and remaining cayenne
pepper and curry powder. Serve broccoli
with curry dipping sauce.
