Phytoceramides are naturally found in wheat bran and spinach. For an extra dose of fat, top with a poached or fried egg. 1/2 cup wheat bran cereal 2 cups water 1/4 teaspoon salt 2 teaspoons olive oil 1 garlic clove, minced 6 ounces baby spinach leaves 2 tablespoons prepared pesto 1 large ripe avocado, thinly sliced, divided Place the wheat bran, water, and salt in a medium saucepan over high heat. Bring to a boil, and then reduce heat. Cook for 1–2 minutes until hot. Cover and remove from heat. Keep warm while you prepare the spinach. Heat a large skillet over medium heat. Add the olive oil and garlic. Cook for 15–30 seconds until fragrant. Add the spinach. Cook 1–2 minutes until just wilted. Season with salt/pepper. Divide wheat cereal into two bowls. Top each with a tablespoon of pesto, half of the spinach mixture, and half of the avocado. It's delicious with a sprinkle of everything bagel seasoning on top!
