Filled with sunfl ower seeds, almonds, pumpkin seeds (pepitas), and chia seeds, a ¼-cup serving fulfi lls your daily requirement of vitamin E. This superfood granola is also a source of zinc, which protects cell membranes, helps maintain collagen, and promotes skin renewal. Enjoy this on its own or with yogurt. 3 cups rolled oats 1⁄4 cup sunfl ower seeds 1⁄2 cup chopped almonds 1⁄4 cup pepitas 3 tablespoons chia seeds 1⁄2 cup pure maple syrup 1⁄2 cup melted coconut oil 1 teaspoon vanilla extract 1⁄2 teaspoon ground cinnamon 1⁄2 teaspoon salt 1⁄4 cup raisins 1⁄4 cup dried cranberries Preheat oven to 300 degrees F. Place oats, sunfl ower seeds, almonds, pepitas, and chia seeds in a large bowl. In a smaller bowl, whisk together the maple syrup, coconut oil, vanilla, cinnamon, and salt. Pour over the granola and mix well. Place the granola mixture in a single layer on a baking sheet (you may have to use more than one sheet) and bake for 35–40 minutes until golden brown. Toss the mixture every 10–15 minutes to prevent hot spots and burning. Remove from oven and lightly toss with dried fruit right on the sheet pans. Let cool completely to allow clusters to form. Store in airtight container for up to two weeks. Super Seedy Granola Serves
